In this joint webinar, titled "Understanding the role of additives in chocolate manufacture: linking molecular interactions to bulk rheology", Dr Daniel Hodgson from the Edinburgh Complex Fluids Partnership (ECFP) and Dr Tseden Taddese from Hartree Centre discuss their ongoing efforts to link molecular interactions in a model chocolate system and bulk rheology using a combination of molecular dynamics simulations, discrete element modelling and bulk rheological experiments.

Food waste remains a significant challenge for many developing countries and sub saharan Africa is significantly affected. Despite the high levels of production, many still go hungry and adequate transportation was identified as one of the core barriers to reducing food waste and consequently hunger. Through funding from the STFC, a DLT approach was designed to enhance communication between agro-food actors, including the digital decentralisation of transport procurement. The initial enquiries were positive with shortened lead times, better asset utilization and reduced waste as some of the emergent outcomes from the local field study.
A digital application (mobile) is currently being developed and is expected to be operational in the next 8 weeks. This will further enable the implementation of learning from the field study and enhance agro related data collection for future studies and improvement.
In December 2022, Dr. Daniel Evans delivered a webinar for SFN+ to talk about his research on how to collect environmental, spatial, and social data from a cluster of spaces within the London Borough of Islington and how these data can be integrated to assign functions across urban space.
